St Hilary Vineyard Sparkling White Wine

Our sparkling wines are made using the Traditional Method, the time-honoured method used to produce some of the world’s finest sparkling wines. This means that their journey from vineyard to glass is beautifully unhurried.

The debut St Hilary Sparkling White Wine is a blend of hand-harvested Pinot Noir, Pinot Meunier and Chardonnay grapes picked in October 2023.  Crafted by natural wine maker Dave Morris at Mountain People Wine, the wine has spent 12 months on the lees before being released. St Hilary Sparkling White Wine (2023) has been awarded Welsh Wine Protected Designation of Origin recognising its provenance and quality.

We know good things are worth waiting for. That extra time and care means every sip delivers elegant bubbles that dance on your palate, fresh fruit notes, and a creamy, toasty depth that makes celebrations (or quiet moments) feel extra special.

We can’t wait for you to experience it—the first pop of the cork, the gentle fizz, and that delicious moment when it tickles your nose and delights your taste buds. Cheers to patience, craftsmanship, and pure enjoyment!

The 2023 vintage Sparkling White Wine from St Hilary Vineyard is bright and inviting, with delicate streams of fine bubbles and aromas of crisp green apple, fresh lemon and warm brioche.

On the palate, zesty citrus and orchard fruit are wrapped in a soft, cloud-like mousse, layered with notes of toasted coconut biscuit and freshly baked brioche. A gentle floral lift adds charm, while the lively freshness keeps everything beautifully balanced. The finish lingers with a touch of citrus warmth and subtle biscuit richness — an elegant and quietly confident expression of modern Welsh sparkling wine.

This can be enjoyed as an aperitif, but it also shines alongside freshly shucked oysters, light seafood dishes or creamy Welsh cheeses.
